Jurassic beer

Remember the main premise behind the re-creation of dinosaurs in the movie “Jurassic Park”? Extract a little dino DNA from a mosquito trapped in a piece of prehistoric amber, and viola! You’ve got a dinosaur. According to this article, a Cal Poly scientist did the same thing in real life, but with yeast. And guess what? You get beer! So what does beer made from 45-million-year-old yeast taste like? According to reviewers, it’s “smooth and spicy,” and has “a weird spiciness at the finish.” The spicy taste is credited to the unique qualities of the ancient yeast.
