I caught up with Dave Cathey, of food dude fame, a few blocks from where I live on Friday night. The Hn8th Street festival-food market-night market-reason to block off a street-whatever you want to call it event that happened on Friday night in MidTown seemed to be a success. Long lines. Storm clouds. Happy people. Just a few of the observations from the 90 minutes I spent talking with people and pressing record on the Canon 60D (shot with 16-35mm lens).

Bin 73 singles out the partnerless for Valentine’s Party

Shot this earlier this month at Bin 73 with my Canon 60D with a quick GoPro Hero 2 moment. Photos by The Oklahoman’s Nate Billings. The DSLR is pretty good in low light, but it was like a cave – very dark. My fault, Beau Stephenson – a great guy on this shoot – offered to turn on more lighting. So that’s my fault. But that burger he cheffed up was outstanding. I also want to try the Cuban I saw on the menu.

He’s Irish. She’s Italian. Both are excellent on camera and great to work with.

Sean and Cathy Cummings chef-it-up every other month with the OPUBCO video crew. We keep a small footprint, usually 2-3 people running a two-camera set-up. The videos are released twice a month on NewsOK.com. And they can be watched at Buy For Less’ web site and YouTube page. Also they can be viewed on the many screens inside the Buy For Less Locations.

We usually tape four episodes per session. Today we cranked out nine, including five :15 clips that will play on the Buy For Less screens promoting their new cheese section.

Click on the diagram to the right for a larger view of the set, located just outside the Buy For Less deli.

You can catch up with Sean at Sean Cummings Irish Pub, and Cathy at Vito’s. Both are on North May. But do it quickly, they are headed to Italy – her turf – for a vacation later this month.

Pancakes!

Spent all day today shooting pancakes. DeWafelbakkers Pancakes. I’m a newly coverted, big fan.

We are shooting production of an upcoming series based on the “Hoarders” show. Our girl Kathy just can’t get enough pancakes, specifically DeWafelbakkers pancakes. They’re everywhere. In the kitchen. In the car. In bed!

Open Flame: Essays on a grilled chicken

One of our new productions is called Open Flame. Dave Cathey calls it “open mic night” for local chefs. To kick off the event, and there are six total planned at American Propane,

Cathey invited Ryan Parrott from Iguana Grill and Luke Fry from Good Egg Dining Group to step up to the mic/grill. I think Mark Ridener from Good Egg’s Cheever’s Cafe originally was to man the AGE grill but had a scheduling conflict. Enter Chef Fry, who leads the Republic Gastropub kitchen efforts.

David Jones and I shot the event last Thursday. No shortage of smoke in the awesome cabana at American Propane. Whether we violated any burn ban ordinances, I don’t know, but the crowd of around 50 people enjoyed the fine grilling put on by these three.

J.D. Merryweather from COOP Ale Works provided Native Amber and Horny Toad beer. I mean, a man needs something cold and refreshing to wash down wings, right?

Some things are just understood.

Great event. Took a week for my gear to air out. Clothes needed a couple rounds in the washing machine.

As per our usual, Jones and I shot with two Canon 7D cameras, matching the audio with a Zoom H4N. Jones went hand held with his shooting, using the camera strap as a third point of contact. I stayed with the tripod.

And below is an outtake that didn’t make the final product. Dave Cathey and Luke Fry are suspiciously behind Ryan Parrott, trying to light the grill. Judging by the ensuing fireball, they figured it out.

Three, count them, three videos from chef Robert Black as he ends his adventure in France. I’m impressed with the audio recording ability of the iPod Touch that we sent with him. The camera person isn’t necessarily that close to Robert and his guests during these recordings. The video quality is good as expected, but the audio is pretty solid for a $200 camera.

Cafe Do Brasil’s Ana Davis: From Brazil to Midtown

I’ve known Ana Davis for years. The charming lady in the above video shot this week is the same friendly, approachable lady from several years ago.

I remember when my friend Steve Cortes and I would do lunch at More Than Muffins, owned by Davis and her brother. We’d talk Carnival with Ana if it were early enough in the year. She’d always encourage us to visit Brazil or travel anywhere when we had the opportunity.

Cortes is now General Counsel at Office of the Governor of Oklahoma. Yeah, I know, big time.

So is Davis. She moved her ovens from 19th and Classen (now a space occupied by the fabulous Cafe Antigua – amazing, amazing breakfast, my friends; get the No. 7, or No. 8 which is the bigger version of the No. 7) to the booming Midtown area.

Cafe Do Brasil is at NW 11th and Walker. It anchors the roundabout area in a gorgeous Spanish-looking building.

I caught up with Davis on Tuesday morning for this interview. Her story is amazing: one of 12 children who wanted “to fly” but grew up with a conservative, protective father. Davis told me she became the first of her family to go to college. Following her path, her younger siblings would go to college. And her father would pay for it, completely changing his perspective on education and women’s roles.

I asked her how does a person know they need to do bigger things. She could have easily stayed in Brazil and done the family thing. But she went all in and left South America for North America. And for Oklahoma, of all places. She said if you know in your heart what you want to do and combine that with a lot of hard work, it will work out (to paraphrase her response).

Big thanks to Davis for allowing me the time to catch up with her and invade her kitchen. Her staff was very helpful too. I doubt they really needed camera guy leaning over their shoulders while they prepared lunch.

Cafe Do Brasil is closed on Mondays, open otherwise for lunch and dinner, including brunch on the weekends. I had the excellent Migallas last weekend.

And yes, the video is a lengthy 12 minutes. But I think that’s a strength of the Internet. You can provide the time to let a fascinating person like Ana Davis tell her story. And why would you want to edit and cut down that conversation? In fact, there’s another 2 minute chunk about her father that I had to cut. I think you can learn more about Davis by watching her interview and how much passion she has about her story and her job.
