I caught up with <a href="http://blog.newsok.com/fooddude">Dave Cathey</a>, of food dude fame, a few blocks from where I live on Friday night. The Hn8th Street festival-food market-night market-reason to block off a street-whatever you want to call it event that happened on Friday night in MidTown seemed to be a success. Long lines. Storm clouds. Happy people. Just a few of the observations from the 90 minutes I spent talking with people and pressing record on the Canon 60D (shot with 16-35mm lens).<br />

The DSLR is pretty good in low light, but it was like a cave &#8211; very dark. My fault, Beau Stephenson &#8211; a great guy on this shoot &#8211; offered to turn on more lighting. So that&#8217;s my fault. But that burger he cheffed up was outstanding. I also want to try the Cuban I saw on the menu.<br />

I shot this interview with Angi Bruss and chef/owner/partner Kurt Fleischfresser on Saturday night. Fleischfresser was debuting his concept, The Tasting Room, which is behind Will&#8217;s in the Will Rogers Theatre on NW 43 and Western.
<p>
It was the <a href="http://blog.newsok.com/davemorris/2010/04/06/the-other-white-meat/">second straight weekend</a> I had shot something with Chef K, both weekends decidedly involving world-class food. For a tech geek like myself, seeing the kitchen with cameras and flat screen in operation was pretty cool. While Chef K chefs behind the grill and stove, he can step on a button and toggle through various camera shots that appear on the flat screen for the entire room and the entry hall.
<p>
I&#8217;m a big fan of Will&#8217;s, especially during warm weather on the patio. The food is exceptional. Chef&#8217;s food, I&#8217;ve heard it called. The egg salad sandwich is insanely good.
<p>
Pardon the audio on the above video, something about Angi&#8217;s mic bugged out during the interview so I went with the on-board mic on the trusty Sony HVR A1U. The Canon 7D refused to read cards this weekend.<br />

The above video is a quick edit on Saturday&#8217;s Cochon555 event in Stillwater: 5 pigs, 5 chefs, 5 wines.

5 kinds of inspired cheffing.
<p>
And I&#8217;ve never wanted food less.
<p>
You see, the video I haven&#8217;t posted is the pig you see stretched out within this video. The one with the eyes stabbed out.
<p>
That poor porker faced a worse fate: knives, hacksaw&#8230; you get the picture. Actually you don&#8217;t because I haven&#8217;t posted it: the part where the head is cut off. It was later paraded around, after the auction.
<p>
I shot this video with a hand-held Sony HVR A1U. My kit didn&#8217;t have the right tripod plate &#8211; stupid mistake lesson: never get to a shoot without checking all of your equipment, including plates, mic sensitivity levels and batteries. Maybe even tape stock. So the finished video fared far worse than I hoped.
<p>
But I think it still tells the story minus the aroma.<br />

Here&#8217;s how it works: sometimes a video request will come in via email from the newsroom to the OPUBCO Studios and I feel the need, the &#8220;right,&#8221; the hunger to personally handle the request.

That was the case this week.
<p>
I caught up with The Oklahoman&#8217;s food editor Dave Cathey and Matt Clayton for a preview and tour of RePUBlic Gastro Pub, Good Egg Dining&#8217;s latest opening. The place is spectacular inside. I&#8217;m a big fan of patios and it has one of those too, complete with flat screens, secluded from Classen.
<p>
Walls of beer.
<p>
Flat screens of over 100 inches. Several of them.
<p>
Trendy decor.
<p>
And outstanding mustard dipping sauce.
<p>
RePUBlic opens Monday. I&#8217;d recommend it from what I tasted. The burgers, wings and chicken were exceptional, and that was only a bite or so of each. Some weeks are more rough than others with this gig.
<p>
Watch the video above for a sneak peek. My tripod completely crapped out on me during this shoot, meaning the head came completely unscrewed and fell off. Fortunately the camera &#8211; Canon 7D &#8211; was already in the bag. But I came away with limited pans and moving shots, they just weren&#8217;t smooth enough to use. The Oklahoman&#8217;s David McDaniel, a big time pro, was on hand to shoot stills for NewsOK and The Oklahoman. I used some of his stills in the video because they were much better images of the food.<br />

Sean (<a href="http://seancummingsirishpub.net/">Sean Cummings&#8217; Irish Restaurant and Pub</a>) and Cathy (<a href="http://www.vitosokc.com/">Vito&#8217;s Ristorante</a>) Cummings were in rare form this morning. They cheffed up two soups, some scallops and a pepper crusted steak.

Caught up with the <a href="http://blog.newsok.com/fooddude/">Food Dude, The Oklahoman&#8217;s food editor, Dave Cathey</a> for lunch. Cathey and I discussed some of our upcoming video series, the Lunch Birds, Try This! and a Chef&#8217;s Table concept. We were joined at <a href="http://www.rococo-restaurant.com/">Rococo Restaurant &#038; Fine Wine</a> by owner/chef Bruce Rinehart, Iguana Grill owner/chef Ryan Parrott and Kristy Klockhart. I recommend the Rococo&#8217;s Gangster Sausage Grinder. I&#8217;d also recommend a pair of Rinehart&#8217;s always flashy pants. Next time you&#8217;re there, see for yourself.

Back at OPUBCO Studios, I interviewed the National Weather Service&#8217;s Rick Smith via Skype this afternoon. Rick is the warning coordination meteorologist with the <a href="http://weather.gov/norman">National Weather Service&#8217;s Norman Forecast</a> office. It&#8217;s going to get cold. We will do more interviews throughout the winter and spring, including tomorrow morning for an update.<br />

Ryan Parrott, chef/owner of Iguana Grill, sat down a couple weeks ago with us. In fact, it was the same night we shot the interviews for the upcoming Skirvin video with Steve Lackmeyer and Jack Money.
<p>
<a href="http://tannerherriott.com">Tanner Herriott</a> and <a href="http://blog.newsok.com/fooddude">Dave Cathey</a> handled the interview with Parrott. Tanner used the Canon 7D and a Zoom audio recorder. Great images, audio sounded great too considering it was only the onboard Zoom mic, stereo setting. Notice the &#8220;Top Chef&#8221; type shooting of the food and the rich colors.
